Penny for your thoughts

Happiness comes in many forms -- in the company of good friends, in the feeling you get when you make someone else's dream come true, or in the promise of hope renewed. It's okay to let yourself be happy because you never know how fleeting that happiness might be.

What you thought would get worse at night

Ok the rainy season is indeed here. ( accept it! ) Last night it was raining hard, i could hear the loud roaring thunder, good thing i was in the office i cant imagine what i would have done if i was alone at the apartment. Ok maybe i can…uhm…crouched in one corner of my room, away from the windows and mirrors or anything that has luster and could reflect lightning and conduct heat, hands covering my ears, shrieking every time lightning strikes and thunder rolls, wolves howling in the background and to add some drama i can also imagine hearing the psycho background usually used in movies.

Well so much for my wild imagination, it wasnt raining anymore when i got home. All thats left in the misty streets were water puddles and  shining pavements desolate in the night. As i skipped made my way through the mud and muck to ride the jeepney I noticed there was construction going on, meralco i think fixing one of them posts, goodness i hoped it didnt cause any power outage or im gonna die (psycho background). Good thing it didnt, all the lights were pretty much switched on and i watched tv when i got home, the roaring thunder was now replaced by the noise coming from my next door neighbor's boxes and furniture, they just moved so they are still rearranging and renovating i assume. Oh yeah they have a bunch of kids too, i cant say how many because they seem to increase in number every time i see them. The howling wolves now replaced by their annoying dogs who seem to bark at anything moving, and i mean anything. Other than those disturbances, id say the night was rather peaceful.

Now all of that made me hungry so i checked in the kitchen and what do you know our ulam was Sinigang na sugpo! I could not believe my eyes!  So i  filled my plate with lots of rice and soup and gobbled up on what i, at that time, thought was my share. Well my house mates didnt say anything when it was all gone so im assuming yeah it was all for me. hehe. There's nothing like a cold, rainy night with hot and steamy sinigang soup!

For those who have the same craving here's something that might help

Sinigang na Sugpo

10 cups water
2 pieces onion quartered
4 pieces tomatoes, seeded and quartered
2 pieces daikon (peeled and sliced diagonally into discs)
12 pieces long beans (sitaw), cut into 2-inch lengths
4 pieces green chili peppers (sili)
35 ounces prawns or shrimps, trimmed
14 ounces spinach or Asian watercress (kangkong)
1 pouch (1.76 ounces) Mama Sita's Sinigang (Tamarid Seasoning) Mix

Cooking Method:

Bring water to a boil. Add onions and tomatoes. Simmer for 5 minutes. Add daikon, long beans, chili pepper, fish sauce, and Mama Sita's Sinigang mix. Continue to simmer for three minutes, uncovered. Add the shrimps and simmer for another 3 minutes. Turn off the heat and add the spinach or kangkong. Cover to steam-cook the vegetables. Serve with fish sauce.
